because homework is overrated....

I should be doing homework, but...
 
As my husband can attest... I've had a lot on my mind lately.

So, because I know you all love to read what I'm thinking, I thought I'd get some of it out in this blog. I realized it had been awhile since I posted last, and although not much has actually happened, it feels like sooooo much has happened.  Here are some things I've been thinking about.

1- I have been loving my second round of practicum. I'm in a third grade class at Old Mill Elementary in Heber. Can I just say, I LOVE THEM. Oh man oh man. They are so great- I don't think there is a better class out there- literally. They are usually so well behaved, and they love working together. They all get along so well. We have had so much fun. I can't believe how much I've learned about teaching, and I can already tell I am improving. I still have a long way to go, but some more things are starting to come naturally, and I can focus on other things that I need to learn. Today, we ate lunch with our class and played four-square with them at recess... I was a little rusty, but I figured it out eventually.... :) We all realized that we only have one week left, and everyone was telling us how sad they were and it hit me--I'm so attached to these kids! I love them so much and I've only been with them for a few weeks. They are so funny, smart and sweet. I wish I could stay with them the rest of the year.

2- I also realized that the semester is coming to an end... and so quickly! I can't believe how close I am to graduating!!! I'll be graduating this December. what?!

3-I finally decided on student teaching. I had to choose between student teaching and an internship. Both are good options, and it may seem like a pretty easy decision but... we all know how indecisive I am about everything. Every day I thought I wanted to something different. Finally, I decided to student teach. This means I will be done in December. I'll be spending time in a classroom for the semester, but I don't know much other than that, and I'm excited to find out. 

4- Ethan and I have been throwing around the idea of going to Texas for the summer. Ethan has the opportunity to work for his dad installing turf down there. Its going to be hard for me, I've never been away from home that long, or anywhere else. I love to travel, but this is different, and a little scary. I am excited for a new adventure, though. I'm glad we'll be with family, and it will be good to be with family we don't usually see. We'll see where this summer takes us! 


Now that you've read all the boring details of my life... here's a recipe I LOVE.  
MINT BROWNIES!
They are like... 85% fat, and 15% sugar, so be warned. These taste so great! I also found a cookie version of this using cake mix cookies (the cookies are 1 devils food cake mix, 2 eggs and 1/2 c. oil. Thats it. Seriously. The rest is the same- just make cookies!) Here's the link to that website. (Also- if you make this version, use about half the amount of butter in the ganache. If you use all the butter, that's all you will taste. The amount of butter should be about the same as the chocolate.)
